Enchiladas with Chard Filling

Tbspoil or butter1Tbsp  oil or butter
garlic cloves, peeled and chopped1Tbspflour
bunch green onions, chopped1/2cupmilk
 4cupschard, coarsely chopped
(can mix with other greens)
1/2 cupcheddar cheese, grated
corn tortillas 1 cup  salsa
 

Heat oil or butter. Sauté garlic and onions until golden. Add chard in small amounts. Cook them down. Make a white sauce by melting butter (oil), stirring in flour, adding milk and cheese. Stir it until thick, then fold it into the cooked chard. Fill the center of each tortilla, roll the tortilla up, and place it in a lightly oiled baking dish. Spread hot salsa over top and bake in 350 degree oven for 25 minutes. Non-vegetarians, I haven't tried this with chorizo or bacon, but it might be good.
