Rebecca's Ribs

  BBQ rub
1 cup brown sugar 1 Tbsp chili powder
1/2 cup garlic powder 1 Tbsp ground red pepper
1/2 cup coarse sea salt 1 Tbsp cumin
1 Tbsp dry mustard 1 Tbsp black pepper
1 Tbsp creole seasoning      
           
  Vinegar sauce
2 cups apple cider vinegar 1 Tbsp coarse sea salt
1/2 cup white vinegar 1/2 Tbsp black pepper
1/4 cup brown sugar or more to taste depending how sweet you want this 1/2 tsp paprika
           
  Ribs
3 slabs babyback ribs      
    apple juice
 

Rub meat with bbq rub.. wrap tightly in plastic wrap and chill 8 hours

Start grill....for charcoal place coals on ONE side of the grill, for gas light one side. Arrange ribs over unlit side.

Grill 2 hours covered with grill lid. Add 5 -7 charcoal pieces every 45 mins to 1 hour, keeping temp between 225-250. Add a handful of hickory chips to the charcoal every 20-30 mins. Spray ribs with apple juice when you add the wood chips.

Grill 2 more hours.. remove the ribs wrap in foil and grill another 2 hours. After last 2 hours remove foil place back on grill baste with vinegar sauce and grill 20 more mins.
